Harvesting
the Agave
In the heart of the Jalisco Highlands, where the iconic red soil enriches the land with essential nutrients, our skilled jimadores hand-select only the finest blue agave piñas aged 6 to 8 years. Each plant is carefully trimmed to preserve the sweet core, ensuring the purest foundation for crafting our premium tequila
Slow Cooking
in Masonry
Ovens
Our agave piñas are steam-cooked for 24 hours in traditional masonry ovens, then rested for another 24. This slow process allows complex flavors to fully develop, enhancing the agave’s natural sweetness and depth. It is a meticulous method that sets our handcrafted tequila apart from modern shortcuts.
Tahona Stone
Milling
At Real Gavelo, tradition is honored with the use of the ancient tahona stone. This time-honored method gently crushes the cooked agave, slowly extracting its rich juices. The result is an artisanal tequila with unmatched earthy, full-bodied flavors that capture the authentic spirit of Jalisco.
Natural Fermentation
& Double Distillation
Only the sweetest agave nectar is used for fermentation, removing the first bitter purge and fermenting with selected yeast to preserve purity and balance. The spirit is then double distilled in stainless steel stills with a copper dome and coil, resulting in a clean, refined tequila with robust character and smooth finish.
